I have a really big rolled shoulder of pork for cooking tomorrow and ive never cooked anything like it before..
Anyone got a recipe or any tips on making it a lovely flavoursome roast tomorrow for sunday dinner? i'm not even sure where to start :rotfl:

On the F Word on Wednesday, Gordon Ramsey roasted belly pork with thyme and garlic, with a splash of white wine. Once it was ready, he put the pork to one side and deglazed the pan with some more white wine, and some chicken stock (leaving the garlic and thyme in the pan). He then strained the gravey into a dish and served, it looked lovely and although ive not tried it yet, i will next time we have pork!!!!0

I've got a really nice fridge magnet cooking guide for meats - if you tell me the weight I'll give you time and temperatures that you need. I take it your joint is boneless too?
This guide has never let me down yet. It's like magic.

Oven temp 325°F, 160°C, gas mark 3
Cooking time 30 -35 minutes per pound.

You can rub the outside with salt, as suggested, and also perhaps sprinkle some herbs and pepper on too. I sometimes put slices of eating apple and onion into the folds of the roll IYKWIM -It infuses the meat as it cooks and tastes lovely.Jane

ooh i cooked a roast pork joint yesterday for the first time in years because i'm not that keen but i'd got it reduced to £2 so i couldnt refuse!
anyway, i used this recipe- 2 ozs fresh breadcrumbs, 2 ozs oats (i just used couple of little sachets of porridge oats), some driend thyme-recipe said some frech thyme leaves and some apricot jam
cut off any fat on the outside of the joint, cover 'sides' of joint (not the ends) in a layer of apricot jam..squich the mixed breadcrums and oats onto the jammy pork and cook as normal-uncover for last 10-15 mins..was lovely and i dont like pork!!!Budget for Jan/Feb £240 per 4 weeks
