Thanks
Hi Hot CookieI'm afraid that, as usual, I am lacking in the recipe department - I tend to just throw stuff in a pan. Even most things I make on a regular basis change in some way or another
For the Black Bean and Sweet Potato Stew, I'm thinking along these lines: Fry cubed sweet potato in olive oil, adding plenty of garlic (not too soon in case it burns). Herbs will likely be oregano and/or thyme, might add paprika. I'll add a slug of passata, some water, a teaspoon of yeast extract, and bring to the boil. Simmer with the black beans for about 15 minutes until the sweet potato is cooked. I'll possibly add some frozen green beans and/or finely chopped watercress (cos that's what will be in the fridge) too. For the Jambalaya, I will be frying sliced onion and garlic in olive oil, adding thyme, chilli powder and paprika. The rice goes in with some water I have dissolved yeast extract in, along with a slug of passata/dollop of tomato puree/maybe even a tin of tomatoes. Boil, then simmer, and I will be adding tinned kidney beans, frozen sliced sweet peppers and sweetcorn for the last 5 minutes.
I hope that helps xLove and compassion to all x0 -
They both sound lovely, Boodle. I keep coming across nice-sounding recipes including black beans, so I'll really have to try and track some down from somewhere.
hotcookie - thanks for requesting Boodle's recipes - I cam on intending to request exactly the same ones.
SunnyGirl - congrats on your new job! :TBack after a very long break!0 -
This is a rough plan because there's one night when I may possibly be out doing a presentation by video conference as part of a job interview ... and I have the student law ball on Friday as well. Saturday is 'eat with your hands' night in front of Dr Who.
Saturday: chipolatas/veg sausages in crusty rolls, hm coleslaw, tomatoes
Sunday: roast beef, roast potatoes, carrots & peas, yorkshire puddings, gravy
Monday: cottage pie using leftover beef and a mixed root veg mash on top
Tuesday: frittata using whatever I have in the fridge, salad
Wednesday: OH cooks, he'll pick something up when he goes to posh village to play croquet
Thursday: fish in some form
Friday: I'll be out, OH will cook, probably his speciality which is macaroni cheese.Mortgage started on 22.5.09 : £129,600Overpayments to date: £3000June grocery challenge: 400/6000 -
Hello everyone
I've really got out of the way of mealplanning and I tell you, it stopped the fuss and drama each night over "what is there" or "don't fancy it".
As I have absolutely no inspiration I take it all from you so we've done a pick and mix and chosen post numbers to have that person's dish for that night so here goes.
Mon - Chilli and Rice - Freaky Ogre
Tues - Pork Steaks, potatoes, veg - JC2703
Wed - Burgers & Salad - Guccigoo
Thurs - Meatballs and spaghetti - Sunny Girl
Friday - Blimus Oreilly tbc - no pressure but what are we having?
Sat - Own choice as it's Dr Who picnic night (weeping angels eeek)
Sun- Chicken, stuffing, veg - Empty Pockets
Right, now that I've sorted that I just have to get the delivery arrangements for you all to send to me:rotfl:Grocery Challenge M: £450/£425.08 A: £400/£.May -£400/£361 June £380/£230 (pages 18 & 27 explain)0 -
I was doing the meal plan last night before going shopping & was really struggling for inspiration, don't know why & it seems really strange to be struggling now, when I've been doing it for months...?
Anyway - decided that when an idea pops into my head during the week or I read something on here that gives me an idea, I'm going to jot it down for next week's meal planner...
Saturday – Chicken fajitas with sour cream & salad & wedges
Sunday – Pork Rogan Josh with rice & poppudoms
Monday – Cheese omelette with new potatoes & HM coleslaw
Tuesday – Macaroni cheese & garlic bread
Wednesday – Mince & onion with mashed potatoes & broccoli
Thursday – Baked spuds with tuna & mayonnaise and salad
Friday – Battered fish, chippy chips & mushy peas
Have a great week everyone x0
