    Cauldron do great vegetarian falafels which are a bit like the kofka balls you mention, they are not a meat substitute, just a very tasty vegetarian product, they would go very well with your cous cous and carrots too. You can get them in the chiller section in Sainsburys/Asda with their veggie ranges and they cost about £2 for 8 falafels.

    Talking of falafel, they also do the dried mix in boxes, slightly cheaper, but not a great deal.

    I think svmitche's idea of almost a mini mezze is fantastic. At least I'd go for the pitta, houmous and maybe tzatziki. Tesco have these 2 for £1.50 currently. If you have left overs you can use it for lunches too, so hopefully no waste and a good addition to a meal you are already comfortable with :)

    How about fajita's? You could have chicken or beef in a seperate dish.Your friend could have refried beans in hers.

    You can either buy them ready made or mush up a tin of baked beans, add some chilli...to taste.. and cook them. Then add the usual fajita fare, lettuce, tomatoes, cheese, sour cream, hot pepper sauce, fried peppers and onions.
