What to give a veggie????

Hi,
I am a major meat lover and one of my best friends has just decided to become a veggie, I have no idea what to feed her...she's coming for dinner on Thursday.
Don't want to be buying a meat alternative, she apparently doesn't like those either so what do you cook?
Before I knew she was a veggie I was planning to do Turkey Mince Koftas with fresh coriander and couscous plus roasted carrots so what alternatives can I give her that fit in with that meal?
Don't wana break the bank on a tight budget so penny ideas rather than pounds please.

    Obvious substitutions for meat in terms of protein content are any form of pulses, eggs and cheese; mushrooms are sometimes used for texture but don't replace the protein in meat. Using two of the four meat substitutes mentioned here tends to make a meal that is most acceptable to carnivores! It is safest to buy free-range eggs if someone is veggie for animal cruelty reasons, vegetarian friendly cheese (no rennet) is freely available in supermarkets.

    Lentil and coconut curry with rice? Chickpea burgers or falafel (chickpea koftas) with cous cous? Pasta puttanesca topped with cheese? Spaghetti carbonara with vegetarian bacon bits? Spanish omelette and homemade bread rolls? Vegetable quiche and jacket spud? Mushroom stir fry with egg fried rice? Savoury bread and butter pudding? Homemade vegetable pizza and potato wedges? Vegetable shepherds/ cottage pie? Baked stuffed field mushrooms (cheese, spring onion, sweetcorn) with buttered new potatoes? Huevos rancheros ('fried' eggs in tomato and pepper sauce)? Eggs florentine (baked eggs with spinach and white sauce)? Baked stuffed sweet peppers (rice and mixed veg) served with green lentils?

    Vegetarian food is frequently cheaper to make- what about a mixed bean chilli? Vegetable kebabs with the pitta? Hm beanburgers?

    search for veggie recipes on http://www.bbcgoodfood.com/content/recipes/vegetarian/ lots of great veggie recipes on there that meat eaters love too.

    What can I put with the couscous and roasted carrots?

    Falafel or chickpea burgers or sliced lentil loaf? Ratatouille plus mix some chickpeas into the cous cous? Stuffed mushrooms or peppers with a mix of cous cous, feta cheese and peas? North African curry with hard boiled eggs? Vegetable and halloumi cheese kebabs?

    Veggie Koftas? Have a google as there are lots of recipes, all of which make me feel peckish!

    Hi Staceysteve - I have a veggie friend, and last time she came round I did a shallot (or quartered red onions) and tomato tart tatin.

    Really easy, just fry onions very gently in butter and a little brown sugar until caramelised, add a little garlic if liked. place on bottom of small tin mixed with cherry tomatoes and herbs . cover with a circle of puff pastry - tuck down side of tin - then bake. Once patry has risen, just turn it out - can always add some goats cheese, or whatever you have, once cooked.
