    Ask her to bring her own and then cook it herself! Then you get off scot free if she doesn't like it

    If you tell me if you are using plain couscous or one flavoured in a packet-what it is, plus whether you like zesty or warm flavours I can try pop a quick dish of what I personally would do? I adore cous cous, so tend to make a lot of variations :) Also how many adults :)

    Nutroast.

    My mum used to do it for my sisters friend who would not eat meat or anything pretending to be meat! She used a Delia recipy and it always went down well.

    I've been a veggie for over 20 years, heres some of my favourite meals

    veg curry
    veg pata bolognese
    aribiata pasta
    veg chilli
    falafel, pita bread and salad
    veg fajitas
    peppers stuffed with cous cous and veg with salad
    risotto mushroom and spinach

    1 Teaspoon cumin Seeds
    6 Black Cardamon Pods
    1 teaspoon Mustard Seeds
    Teaspoon Cloves
    Cinnamon stick
    1 tablespoon oil
    (FRY THE ABOVE FOR A MINUTE OR TWO)
    Teaspoon Turmeric
    1/4 Teaspoon Chili powder
    1 teaspoon salt
    1 Tablespoon Tomato puree
    Garlic 3-4 cloves grated
    Ginger Grated (about 1 Tablespoon)
    2 Large onions (finely chopped)
    ADD THE ABOVE AND COOK ABOUT 10 min[/B]

    Add Potatoes (quartered) 4 Good size ones
    Green Pepper
    Green olives(pitted)
    1 pint water
    Salt.

    Simmer for about 20 min then add 1 teaspoon garam masala and a table spoon of lemon juice & fresh coriander. Remove the cardamons & cinnamon stick before serving.

    Variation
    Add lentils 1 Cup + 1/2 pint of extra water and either tinned or quartered tomatoes for a potato curry + a few carrots.

    For a meat/chicken curry use the first lot of ingredients and finish off with the garam masala +Lemon juice + coriander + a few quartered tomatoes.

    Tesco do really nice mushroom burgers (in their cool cabinets) which would probably go well with that.

    Griddle pan some large slices of aubergine in olive oil, or roast them with the carrots.

    Is she a veggie or vegan? If she is eating cheese still, grill or fry some halloumi and serve with what you were going to serve.

    Roast some other veggies with your carrots (onions, peppers etc)?

    This is what my veggie friend would serve, but she would also put out mixed salad, taboulleh, pitta breads, houmous etc so we all end up stuffing ourselves on the veggie options and don't notice there is no meat!!
    I'm so sexy it's a wonder my underpants don't explode.
