Fish pie is really easy. First cook potatoes for mash, and mash as normal, without too much additional stuff. I like to add mayo to mash but don't use for fish pie.You could probably also add in some of your swede mash. Cook your fish in a bit of milk (or half and half with water). Keep the milk to make your sauce and possibly add some to mash. Remove the fish from the milk and allow it to cool enough to handle while making your parsley sauce. Either use a packet of sauce or some bisto parsley sauce made with fishy milk, or make a traditional white sauce with your milk and add in some chopped parsley (dried would probably do in a pinch). Break your fish into little pieces into a casserole dish, disgarding skin and bones. Pour your parsley sauce over the top, smoothing it out to get all the fish covered. Finally top with mash, and sprinkle with grated cheese. you could add breadcrumbs to the cheese for a crispier topping. As all the ingredients are pre-cooked, you can freeze it as it is and bake later, or bake in a medium oven until the top is browned. If freezing, you probably could just shove it straight into the oven from frozen on low for ages, but if it is in a microwave safe dish I would probably nuke it for a while first...

    Hi Kirsteen,

You may find some useful recipes on here:

http://www.lovefoodhatewaste.com/ I've found some really nice ones on here in the past. If you click on the recipes tab, you also have the option of searching based on what ingredient you've got to use up.

Well done for finding all of those bargains and doing so well with the batch cooking today.

    Thanks for the recipes!

We are doing really well - the first chicken lasted forever!

As well as the roast, the curry, the pasta dish and the soup we got 2/3 chicken sandwiches out of it as well, and the kids are having leftover chicken pasta for supper today.

I had NO idea a chicken could last that far!

I'm making a massive batch of chilli now - I've shoved in carrots shredded and lentils and three lots of cheap kidney beans to bulk it out - plus five onions and some mixed peppers.

It looks like there is enough for about six meals!

I've been telling everyone I know about rubber chicken, but they don't seem as excited as me! lol :D

I'm so grateful for all the help.

We have gone £5 overdrawn as I needed to put more petrol in the car than expected, but I have some work mileage expenses due in and that should pay for any more petrol we need, so I'm feeling confident we will make it!

OP if you have a whole chicken after you have used everything you can stick the carcass in a slow cooker cover with water and season - after a few hours you should be able to remove the carcass and pull off any remaining meat that has not fallen off.

Once the carcass is stripped you may have enough meat for a pie or for soup. All the liquid can be used as stock.

If you have any veg that are going over I would also stick them in rather than waste them as it all adds flavour to the stock.

And well done for enjoying your crisis - always the best way to come out the other side!
  • OP Im so impressed with your ideas, and good luck, we are in a similar position this month and I too have been scrabbling round in the cupboards and freezers. Love food hate waste is a very good website, take a look
