I discovered something today that might help Shirley if she has limited freezer space but wants to buy the more economical larger box of eggs. Carrot cake is just as nommy if made with frozen eggs! I had a huge surfeit of eggs a while back, and froze them in 2s and 3s (lightly beaten), intending them to be used for things like scrambled egg, Spanish omelette and my non-cheesy version of carbonara.
Today I just thought, haven't made carrot cake in a while. No fresh eggs in due to the frozen surplus, so decided to give it a go with those - and hey presto. It works.0 -

I've downloaded the Skype thing, but not terribly sure how to use it. I think I've found Weezl (I'm guessing you're the one in Cardiff) and possibly Arty, but that's about it. 0
