You can buy headphones specifically to work with opticals, but youll not get it to work with your monitor (in fact im not even sure you monitor HAS sound!):idea:0

Hiya, I wanted to do this exact same thing a while ago and this is how i managed to do it...
Firstly I used a HDMI to DVI cable that sends the video from the PS3 to the PC Monitor.

Then using the anolgue cable that comes with the PS3 (the red white and yellow) cable I attached a phono to 3.5mm jack connection like this one on maplins:

Now the problem is obviously you cant link a 3.5mm to a 3.5mm male to male so I then attached a 3.5mm coupler...
maplin.co.uk/Module.aspx?ModuleNo=1213
Now you can connect you 3.5mm pc speakers or headphones and it worked fine for me.
Then all you do is setup the ps3 so the video is sent from the HDMI cable and the audio is from the av phono cable and its all sorted
