Tried with double and with whipping cream, got my victoria sponge jammed up ready, been whisking it like nobodies business, lots of bubbles but still thin. It was taken out of the fridge cold. Anyone got a technique?

If it doesn't whip, add a spoon of milk to help it along.....

When I was a little girl, I was told that cream needs to be at room temp to whip properly. Always works for me :D

Try a small spoon of icing sugar instead of normal heavy sugar

  • Oops used granulated sugar :) No I tried a whisk and a fork. I have walked off and left it in a huff. I had the same problem yesterday using double cream, thought I'd get whipping cream instead, whipping cream my foot it has done !!!!!! all. I will attempt to make buttercream to fill the cake with now!!!
