    I had the same dilema last night so I made up some rice, frozen brocolli and cauliflower found in the back of the freezer, peas, carrots and sweetcorn and the added some herb dressing that I had left over.... It was actually really yummy and filling :D

    poodle that safari stew sounds really nice but I dont like celery, anyone able to think of a substitute? I might cook this tomorrow night as im equally stuck for ideas at the moment

    Fist thing I thought when I looked at it was carrots would go nice in that or maybe it doesn't need a substitute because of the onion ;)

    Being vegan I do a fair bit with rice here are a few examples:

    Idea 1
    Rice
    Chopped Cucumber
    Chopped Tomato (fresh)
    Chopped Coriander
    Can of Chick Peas
    Fry a small amount of onions and stir in Pataks Curry paste add to above mixture and serve.

    Idea 2
    Rice
    Chopped Cucumber
    Chopped Tomato (fresh)
    Can of Chick Peas
    Berlotti Beans
    Squeeze in fresh lemon juice

    Will add some more later boss about and i am supposed to be working :j

    What can you put in rice salad to make it less 'bland'?

    I put in -

    Rice
    onion
    Pepper
    Salt pepper
    Dried herbs
    squeeze of Lemon juice
    squeeze of tomato puree

    But it's still a bit tasteless..

    Any ideas?

    What about sweet chili sauce? herb dressing? normal salad dressing? salad cream mixed with tomato sauce? pesto?

    I made coconut rice to eat with curry last might and it was really tasty. I cooked off half an onion in some oil, and added a cinnamon stick, some cardamom pods and some black peppercorns. When the onion started to brown, I stirred in a pinch of saffron, a pinch of salt and one (American) cup of rice, followed by a tin of coconut milk and about half an (American) cup of water. I stuck a lid on this and cooked it till the rice was tender and all of the liquid had been absorbed. It was really delicious.
  • When I am cooking rice I add some frozen mixed veg.......peas, carrots, sweetcorn,red pepper broccoli.

    I put the washed rice in a pan and add the veg, once it comes to the boil, turn off the heat and leave the lid on for about 15 minutes by which time the rice and veg should be cooked, rinse well with a kettle of boiling water and tip into a sieve to drain for a mo and then serve......if you leave it to go cold, add vinegrette for a tasty rice salad.
    September grocery budget........trying for £80, not sure if I will make it though!!!!! I certainly did not last month, lost track of the final bill. Will do better this month honest.

    I often use rice in a sort of stir fry/risotto type meal. Fry onions and other veggies, sometimes adding some sort of meat or fish and then add the rice - you can use more or less anything in a risotto!

    My kids have decided that rice is nice;) and as I am trying to cook on a budget I am happy to cook more rice based meals but am at a loss as what to do !

    We usually have rice as a side dish and I usually use packet vegetable rice as i am not a fan of plain rice.

    Dishes that have rice mixed with the sauce would be good as if the rice is "on the side" then dd tends to leave it.
    It's not paranoia if they really are after you.
