Safari Stew X6
1 lb mince
3 medium onions, chopped
2 cups of cooked rice
4 sticks celery, chopped
8oz tin baked beans
Seasoning
8oz tin tomatoes
Fry onion and celery in a little oil until tender. Add meat and brown, breaking down lumps with a fork. Remove from heat, add remaining ingredients. Stir well and pour into greased casserole. Dot with knobs of butter and bake for ½ hour at 350ºF
I am sure I usually add a bit of Worcestershire sauce to this, but then I add that to most things!!0 -
A sort of "nasi goreng" is a nice way to use up rice. Boil some cabbage or spring greens, separately to the rice. Lightly beat an egg and make a small omelette, slice this up with scissors. If you have a piece of ham or similar, slice this as well. Mix the rice and veg then add the egg and ham on the top. Good to have with a chilli paste on the side, but not vital. Enjoy!0

Just beware that the smell of haddock can stink out the house. I'll always remember that first date I had after making myself kedgeree for dinner. Oh dear!! The OH still jokes about it 4 years later!BCSC Member 70:j

We often have a "rice and bits" dinner- the kids love it ( and now they are bigger they do actually eat more than they drop:rotfl: ).
Chuck rice on in big pan to cook (mugfull for 5 hungry people). Often add a filet of fish on top to cook- a couple of smallist bits of frozen fish goes a long way in this! add a stock cupe.
Frizzle up oinion/garlic/mushrooms/celery/whatever!
When cooked flake fish into drained rice and add veg.
You can add peas/sweetcorn to the rice too, and the protein can be a tin of pulses- a holiday tinned food staple for us as we camp!
Also look up Kitchri recipies till you find one that fits what you have to hand! This is rice/lentil porridge really, but has spices/veg of sorts (as I say pick the recipie you like the look of). One of those yummy dishes that is very comforting but often "not much of a looker" IYSWIM:rotfl:0 -

quick and easy!"Do not look back and grieve over the past, for it is gone, and do not be troubled about the future, for it has yet to come. Live in the present, and make it so beautiful that it will be worth remembering"0
