Seriously, an employer that does not allow a new recruit to take a holiday that was previously arranged is a pretty poor employer, and if the OP has any kind of case it is along those lines.

Yes, thinking outside the box. I like it! :)

She has tried to contact the recruitment center (the only contacts she has atm) but they are unable to help. We are unsure what other routes to go down.

She does not start training until early May and was due to fly to Egypt 20th May.

I think I might be a bit confused here.

You had 2 flights booked but your girlfriend can't go.
Is the name change (hers) for someone else to go to Egypt with you?

As Voyager2002 says, it's a pretty poor employer who won't honour holidays already booked before taking up a job offer.
Didn't they ask her (or didn't she tell them) at the interview that she already had holiday commitments?

At a guess she will be on a 'X' week training course so Easyjet are unlikely to let someone join only for them not to attend their training for a couple of months. I suspect most firms that have a long period of training when a new employees join would have the same restriction.
