OOOh those waitrose pies are really nice, and deffo pies not quiches.
They look and taste like very good home made pies, but a slice is very expensive, luckily they are often reduced.

My hubby would do a chunk everyday for his lunch.
Even reduced this works out expensive.

Does no one make these cold meat picnic style pies?

If not the Hairy Bikers one calls for fresh cranberries, where do I buy them this time of year?

I really want to learn to make them myself, not keep buying them.

I've got the Hairy Bikers recipe but its a bit of a faff.

Thats why I wondered if any MSEers made them.

Surely with a bit of practice it would become less of a faff... have you tried Delia's picnic pie recipes?

    Hi MrsE,

If you want to stop buying them and make these pies yourself it's going to be a 'bit of a faff' no matter what way you look at it, because you'll need to make the three separate things; the pastry, the meat filling and the fruit topping.

The hairy biker's recipe sounds exactly the sort of thing you're looking for. I noticed in another thread that you're off this week...could you use this time to make double or triple quanities to cut down on the time spent making it and freeze them?

I'd already accepted I need to bite the bullet & make the hairy bikers one:o
I guess I could do two & freeze one, the freezer is almost full of chicken, meat & salmon bought on special offer:money: So not loads of room.

Will let you know how I get on:)

There's lots of pie recipes on the Good Food website and they rate them easy, medium and hard:

One of my most favourite pies is just a deep dish lined with pastry, filled with chopped/sliced ham from a gammon joint or bacon pieces (the cheapy packets of cooking bacon you get at the supermarket) then I add enough egg so it's filled to the top, sometimes I lightly beat the egg, sometimes I add them whole. Then just stick a pastry lid on it and bake till it's cooked.

The pastry will take 5 minutes in the food processor.
While it's chilling, make the cranberry bit & put that to cool.
While the pastry is in the oven, do the sauce bit.
By the time the pastry case is cooled, you will have chopped all the meat.
    Fill, bake, top, cool, eat.

I can't see a faff in all that?

Don't forget, you don't have to do it all in one go - you can make the pastry while boiling the kettle for your first cup of tea, and it can chill for longer than an hour - even overnight if you want. Again, the sauce bit is another to make and leave in the fridge while you do something else.

I'm not very good at following recipes so my take on the Hairy Bikers Pie would be:

    1. Make some pastry, half fat to flour with a bit of water to bind it together, put it in a bowl and stick it in the fridge for a bit. If I really couldn't be bothered buy some ready made pastry and take it out of the packaging.

    2. Forget about making the cranberry jam thingy. If I really want the taste of cranberries with my pie I'll stick a dollop of cranberry jelly out of a jar on the plate.

    3. Fry some leeks, onions & celery until they're soft, sprinkle on some flour then add stock until the sauce looks right. Add a bit of cream, mustard powder and parsley. Give it a stir.

    4. Chuck the turkey & ham in the pan with the onion mixture. Give it a stir.

    5. Bollox to baking blind, roll the pastry out (keeping some for a lid), stick it in a pie tin, add the turkey filling, stick the lid on. brush with milk or egg and stick it in the oven.

    Pie making Anguk stylie! :D

Have a look on Ebay or Freecycle for a pie maker then you can make little individual ones.

    :rotfl::rotfl::rotfl::rotfl::rotfl::rotfl::rotfl:

All jokes aside I do need to buy some of those baking blind beans. I don't go to Lakeland very often & I hate paying P&P if I don't have to.

I suspose a good kitchen dept of a department store?
