My first ever roast dinner!!! Pls help!!

I am making my first ever roast dinner for me and DS, I cheated on the chicken tho (bought a cooked one from tesco's) will try one from scratch next week!
I am stuck in roast potatoes - I am boiling them first, do i put oil in the roasting tin or not? :confused:

  • You could either heat some oil in the roasting tin first (I use gas 7) or to keep the fat content down, I've started to heat the roasting tin without the oil, tip in the potatoes and then brush them with oil using a pastry brush and sprinkle on lots of black pepper.

    I've only been able to cook roasts myself since I moved in with OH. For the first few times, I bought ready made roasties and ready made mash :eek: but would never do this again. Its so much better, and cheaper to make your own.

    Hi, I cut them into even sized pieces and part boil them (till nearly cooked)
    Get the oven hot, put a little fat in the dish and heat it in the oven. Drain the potatoes and put them in the hot fat. Be careful as they will spit. Roll them over till covered in fat and put in oven until golden - 15 mins I think.
    I use lard as it gets very hot and makes them crispy but them I don't mind using lard.

    As wellies said - I use lard or dripping because they come out much nicer than with oil. 10 minutes before the end of the roasting time, I sprinkle some sliced onions into them which gives them a wonderful flavour.
    The ability of skinny old ladies to carry huge loads is phenomenal. An ant can carry one hundred times its own weight, but there is no known limit to the lifting power of the average tiny eighty-year-old Spanish peasant grandmother.

    I put lard or duck/goose (veg oil will be fine)fat in a baking tray (quite a deep tin) put in the oven on high for 5 mins to heat fat up, then add the spuds (part boil for 5 mins first) they should sizzle abit, but this is normal!....watch yourself though as this stuff burns:eek: :eek: :eek: if it gets on your skin...ouch!! Then I put timer on for 15 mins, then after 15 mins turn them and normally leave for about another 10 mins...then voila...they SHOULD be done.

    We prefer big roasties, so normally just cut in half.

    I parboil them for about 10 mins then drain off the water, put the lid on the pan and give them a good shake to rough up the edges.

    Put the roasting tin on the top of the oven under a low light (ok with gas not sure about hob / electric rings!) and add the potatoes, basting them all over (they will spit) then pop in over till crispy and cruncy - yum yum (usually 30 - 40 mins I think on gas mark 5 or 6
    It's easier to get forgiveness than to ask permission ;)

    I like to par boil for about 5 mins, drain, shake to roughen edges then add a bit of flour salt and pepper and shake to coat, then put into hot oil and move around till all covered then roast at 200 turning up to 220 for last 20 mins these are lovely and crispy!!! sweet potaotes are good done like this too but need a bit less cooking time yorkshires can go in for the last 20 mins as the oven is then hot enought!
    quick never fails yorkshire recipe!

    break eggs into small measuring jug see how much you have e.g 4 fl oz
    tip into bowl
    put the same amount of plain flour
    put the same amount of milk and pinch salt and pepper (herbs r nice too rosemary for lamb, sage for pork ect we r big yp fans!)

    I use a hand beater but a whisk is fine mix well
    best if left to rest for 10 mins (overnight if u like)

    put in pan (i make one large one and cut it up)Ensure u put into realy hot fat dont open oven door or they will sink!!
