Secret is as already said-parboil the tatties till just cooked, drain, shake to roughen the edges, put into really hot fat-if fats not hot they wont crisp up properly

I only parboil my potatoes if I'm doing a roast beef dinner.
For a chicken dinner I do the following for lovely soft sticky potatoes

Put chicken in roasting tin - smear butter over.
    Cook covered with foil

For the last 45 min remove foil and add potatoes to tin, coating in the butter and chicken juice.

    Turn after about 20-25 minutes.

Although not crisp, these make lovely sticky roasties.
