At present I'm on Be Unlimited at £13.50ish a month, I see that Be are now offering their Value at £7.50, can anyone tell me what the difference is?

Have a look at the Be (& o2 home broadband) features & net-cost documents I maintain at:
http://cid-99aa6cf1226facfe.skydrive.live.com/browse.aspx/o2%20Broadband%20-v-%20Be%20There%20Broadband
Depending on whether you use any of the features UNIQUE to Be Unlimited (eg free static IP, or over 40GB of data/month, or if you have changed from default Interleaved ADSL to FastPath, or of course synching at over 8Mbps) you would be able to migrate to Be Value without noticing it much, though I would check with the Be helpline about any fresh contract commitment (eg if within you first year of Be).
The docs also include the details of the differences between Telefonica's "Be" brand and "o2 home broadband" brand that may be of interest to you.
