For those halloumi kebabs, which everyone's mentioning
, you could try using a marinade first. This one's roughly based on a Lebanese-style one someone told me about.
I use a mixture (for one packet of halloumi, at least I've only ever seen packs of about the same size) of about a third of an onion (red or white, finely chopped), a clove of garlic, half a lemon, chopped fresh coriander and mint (plus any other herbs you like, parsley might work well to counteract the garlic) and a good slug of olive oil to make it loose enough to coat the cubes of halloumi. Leave in the marinade for at least an hour but as long as possible, overnight if you like. I normally skewer with chunks of red onion and red pepper but sometimes add cherry tomatoes or button mushrooms. They don't melt all that quickly on a barbecue but you do have to keep an eye on them and turn them fairly frequently until they have some nice golden brown crispy bits!
You can also use the above with chicken, which obviously need a proper cook on the barbecue rather than just browning the outside. I did both of these last weekend for a barbecue as my boyfriend is vegetarian and I'm not.0
