Morning all
I have recently been diagnosed with an underactive thyroid and I am struggling with losing weight I halfed my portions of everything I ate and exercise 3-4 times a week. I love cooking and frequently use my SC so I was wondering if anyone could point me in the direction of cheap healthy meals I can cook?

One of my favourite health dishes is a mixed salad with diced warm chicken warm crispy bacon and warm cubed toasted bread.
HM soup and ryvita is another favourite in this house.I am playing all of the right notes just not necessarily in the right order.

lentil soup is a favourite in our house for even my veg hating son! I don't really follow a recipe-peel and chop a large onion, couple of large carrots, some celery if I have it (usually the tough outside bits or the stuff that's gone a bit limp in the fridge!), a couple or three large potatoes. Saute for a couple of minutes in oil, add a couple of good handfuls of washed red lentils (probably about 6-8 oz), a veg stock cube and water-about a pint but you may have to add more as the lentils absorb it, mixed dried herbs if you like (value ones are good and cheap) and if I have any fresh tomatoes I skin, chop and add a couple. Season to taste, and simmer, frequently stirring until the lentils cook down to a mush. Blend with stick blender if you like your soup smooth or sometimes I just use a potato masher for a chunkier soup. This also does well in a slow cooker if you want it ready and waiting for when you get home. If you get time, a few homemade rolls are great with it and it is hearty enough for a main meal. Keeps well to reheat the next day, healthy hearty-and very economical!!!0 -
