Any ideas for quick, healthy and cheap meals

    I know this has been gone over 1000 times here but of course we can't get the old threads up at the moment :eek: My question's really simple: I'm really not well off at all at the moment, what recipes do you lovely people have that are cheap but healthy? So far I've thought of pasta and several types of soup. And that's it.

    I really, really need your help here guys. Hubby and me will eat absolutely anything, we're not picky eaters at all. Please give me your wisdom!
  • When times have been hard ( often ) we have had baked spuds and cheapo baked beans and a scraping of cheese. Filling and healthy, if not that exiting!!

    How about things like sausage and mash, toad in the hole, veggie things like curries, lentil dhal, jacket potatoes and beans/cheese, with salad? Mince and onions, liver (if you can bear it, I can't!) and bacon...

    I'd also be interested to see what people suggest. My shopping bill has risen by at least £15 per week :eek: and I can't seem to get it any lower....

    Anyone know a good recipe for curry or dhal? I only know how to do it out of the jar....
  • These are really nice, and easy:

    Fragrant aubergine curry

    One-pot mushroom & potato curry

    Sweet potato & pea curry

    A tip: I no longer buy coconut milk. When a recipe calls for coconut milk, I use two packets of "creamed coconut" plus enough water to equal 400ml. Microwave it for a minute or so, then whisk it to mix. Cheaper than the tinned stuff, plus if you only need half a tin, you don't have to figure out what to do with the other half.

    I've also discovered an Indian site where the recipes (at least the two I tried) are BETTER than takeaway. Waaaaay better... But you do need to have a whole complement of Indian spices.

  • I don't know how welcome this'll be, but I found a recipe for Black Pudding Hot Pot in Marguerite Patten's Victory Cookbook. I've not tried it yet, I'm making it this evening. But it sounds delicious. Maybe not 100% healthy but she suggests serving it with more veg.

    You just layer thinly sliced potatoes, carrots and black pudding (225g each), sprinkling an onion and 1/2stp dried sage inbetween layers, in a casserole pot. Make gravy using 25g flour, 1 tsp gravy powder and 450ml water in a pan, pour over and put in the oven 180 degrees C for 1 hour.

    My OH loves black pudding and I don't mind it. And it's very very cheap. Especially at Sainsbury's where it's 39p per 100g at the deli counter.

    It's called cold weather hot pot and is VERY tasty. My OH loves it and can't get enough of it. It's very easy because you can make it all in one pot and mince is relatively cheap. Even with organic mince from Morrisons (£1.99) it's not breaking the bank as it serves 6. I'd suggest adding a bit more veg even, as it seemed to still have a lot of mince per portion. :)

    The BBC one could be made with veggie mince, which would turn it into a very healthy dish. Maybe add some swede as well. Thanks for that one :)

  • My stepdaughter makes up a packet of paxo sage and onion stuffing when shes skint! think its about 26p a packet and would be quite warming as maybe a lunch(?) on a cold day like today.
