    A bit late this week, but here it is:
    Monday 1st: HM Cottage pie with cabbage on the side
    Tuesday 2nd: HM Salmon [STRIKE]en Croute (pastry from freezer)[/STRIKE] fish-cakes, wedges and peas/sweetcorn
    Wednesday 3rd: [STRIKE]Spaghetti Bolognaise[/STRIKE] Chilli
    Thursday 4th: Gammon, saute potatoes, creamy cabbage, carrots
    Friday 5th: HM Pepperoni Pizza
    Saturday 6th: Roasted Pepper, mushroom and courgette pasta in tomato sauce, with parmesan
    Sunday 7th: Chorizo and pea risotto with crusty bread

  • Aargh! Does anyone else change their mind about 6 times about their meal plan? :o
    After a trip to waitrose today where I picked up 2 gammon joints and 2 bacon joints (free range) for not very much our plan for the week now looks a little like this

    Mo 1st chorizo and kale carbonara
    Tu 2nd bacon and cabbage, mashed spuds, parsley sauce
    We 3rd bacon, leek and mushroom pasta bake
    Th 4th Chilli and rice, with sour cream and cheese
    Fr 5th haddock mornay, riced potatoes, peas
    Sa 6th sausages &mash, onion gravy, greens (possibly a friend visiting so this might change)
    Su 7th roast pork &trimmings (as above-but I reckon I can feed an extra mouth with these same meals anyway)


    I have one of the gammon joints in the slow cooker as we speak for sandwiches in the week, and a loaf of spelt and granary bread in the bread maker. All I have to do now is get up early enough to make the sandwiches :D

    Shredded cabbage (red or white)
    Shredded Carrots
    Shredded Onion (add how much you want-I like quite alot)

    Then add a small amount of mayo at a time until its all thinly coated (this will depend on how much you have shredded)...then I add a couple of small squirts of salad cream. Add salt & pepper....Voila!

    The combi of the mayo and salad cream is perfect and gives sweet, creamy and tangy IYSWIM.

    If you make too much, I have eaten the next day keeping in the fridge.

    For the 3 of us, I do 1 carrot, third of cabbage and whole onion.

    This is exactly as Pen Pin gave the recipe to me and it's gorgeous :T I never mind making too much as I'll eat it on it's own or with a few peanuts scattered in it :)

    This sounds sooo nice! Can you tell me how you do this please?

    I have a jar of Jamaican jerk seasoning that is made by Dunns River that I rub on the chicken, in a pan (my slow cooker is by Morphy Richards and has a stainless steel pan on a base which is much better than the traditional ones as you can use the pan on the hob) I fry an onion, red pepper and some garlic and fresh chilli and then add the chicken to brown before adding a small amount of stock and putting on the slow cooker.

    For the rice (cheats version) I sweat a little chopped onion and chilli in a large pan, add a can of gungo peas and basmati rice and then add salt and pepper and water to cover and steam unti soft. At the end I stir through some creamed coconut. If you make it yourself you use pigeon or black peas and cook them off first and then add the rice to them but they do take quite a long time to cook.

    need to get back on track before I go back to work so think I'll join in.
    I've actually done a meal plan for the whole of March & will do my monthly shop tomorrow. Might be subject to change depending on any whoopsies I pick up

    Monday - HM Spag Bol
    Tuesday - Chicken, Bacon & cheese with wedges
    Wednesday - HM Chicken Asian Broth
    Thursday - Meatballs & Pasta
    Friday - HM Chicken Madras
    Saturday - HM Chilli
    Saturday - Roast Chicken

    Breakfast will be cereal or toast but is just me in the week. OH will take HM tuna salad & fruit for lunch, I will have 9p noodles or Jacket Potato. BIL has lunch in work.
    A very busy Yummy Mummy to a 1 year old gorgeous boy :smileyhea

    Just got back to GC and menu planning after an eight month visit from DD" + partner + twin DGDs (and all their furniture) With that lot I never got back into planning lol.

    Anyway for this week

    Monday: Pasta Bake (from freezer) and salad

    Tuesday: Fish and Chips

    Wednesday: Chicken (from Sunday's rubber one) new pots and salad

    Thursday: Salmon Wellington, pots and peas

    Friday: Chicken fried rice (with last bits from chook) with salad

    Saturday: Spag bol (from freezer)

    Sunday: Chicken dinner (second breast from last week's bird)


    Breakfast OH toast/ me C Flakes, Porrige or grapefruit

    Lunch OH sandwich/ me leftovers or sandwich

    What?! 6 times?! I never change my mind more that 5 times :rotfl: and really good weeks I can keep it to 4 :D
