I've been manic at work and am now off to Yarmouth for a weekend with my friend - had my haircut earlier and having it coloured in a few weeks but boy talk about expensive :eek:

Packet of Mince, 1 egg, some parsley, 1/4 teaspoon of chilli flakes and thick slice of bread made into breadcrumbs. Make into small balls and chill, cook until brown.
1/2 pint of passata 3/4 pint of veg stock, teaspoon of sugar, More chilli flakes if you like spicy, salt & pepper. Cook and add meatballs and allow to simmer for 30 mins ish...or until sauce is thick enough.
add more herbs, parmesan etc to taste
