I have a large bag of victoria plums which i was going to bottle [can]. i cannot find my book with times in it. Does anyone know how to,hot water method,and do the plums need to be covered with syrup?0

I haven't done this myself but my Good Housekeeping Cookery Book gives the following 2 methods. (I'm not giving the whole method - just answering your specific questions)
With a thermometer: slow method: cover plums with cold syrup, raise the water temperature from cold to 82C/180F over 90 minutes and maintain for 15 minutes.
Without a thermometer: quick method: cover plums with hot (not boiling) syrup and place in warm water. Bring water to simmering point in 25-30 minutes and maintain for 10 minutes.0 -
My wonderful elderly neighbour has just given me a large bag of plums from his tree 4 1/2lb to be exact with a promise of more to come lol. I think theya re victoria plums i want to use them up but have no idea what to do with so many. I don't have any jars so can't make jam any ideas?

Make crumble's,pie's and tart's and freeze, cook to a pulp and freeze,make wine, eat 'em, freeze whole and make jam's later when you get some jar's.hth.£71.93/ £180.000
