Beach House Meal plan help?

Hello gang

Im after your wisdom please.

Me & OH are off to a beach house for a week, first week of August. Its one we can stay in ( ie not a little deckchair shed type thing) however we have limited cooking facilities.

It comprises a small fridge ( which will have plenty of wine in :beer:)
A BBQ and 2 electric rings

Its vitally important that we eat like kings on our hols, and we may well have some visitors and I like to cook for people. So, how do I keep this OS without much fridge space, theres no freezer compartment as I remember either?

Your thoughts and advice please!!

    Pasta with sauce? Lots of salads - grated cheese, tinned fish, continental meat.
    The ability of skinny old ladies to carry huge loads is phenomenal. An ant can carry one hundred times its own weight, but there is no known limit to the lifting power of the average tiny eighty-year-old Spanish peasant grandmother.

    Anything that can be grilled (ie on the BBQ)???

    Also, what you make may depend on how long you have to store food, ie how near you are to decent shopping facilities. If you have easy access to fresh (& not overpriced) food daily, your options are better than if you are limited to what can be stored in the available fridge space.

    This is the thing. theres a tescos about a hour away on the bikes but not a great deal else.

    We will have to take pretty much everything with us .

    Can you do jacket pots in the bottom of a bbq?

    I don't see why not, if you wrap them in foil. Corn-on-the-cob is nice on the barbie too.

    Cous cous and/or bulgar wheat would be good as you can just pour water on and don't need to use a pan.

    You could use lentils for a curry so you can use less fresh vegetables. And maybe a tub of cream cheese and a pot of pesto to make easy pasta sauces and dips. You could also get dried peas and onions and sun-dried tomatoes.

    We do a fair few weekends away camping so have to survive with a cool box, not even a fridge!!

    With only two rings you need to think about substituting things like rice that you'd normally serve with a lot of dishes. We are sometimes in a similar situation and I alwasy make chilli because I substitute the rice for nachos and some tortillas

    Do you have a small pressure cooker you could take? Or a steamer? (I mean the stove top variety) then you could do more than one thing on one ring.
    When we went camping, I used to take one of those tupperware containers that you could put rice or pasta in after only boiling for 5 minutes. But I know you can do that with a pan with a lid - boil the rice for 5 minutes then take it off the heat but keep the lid on & leave for about 20 mins & it should be done. It frees up the ring to be used for something else. (but I would just check the timing before you go if you want to try that, as I am only going by memory!!!!)
