Booking bargain flights from a certain airport

Three of us are looking to go to Copenhagen in a little under 3 weeks. I have checked all the different sites..Expedia, Opodo etc and the best one that is available is from Stanstead, at around £40-£50 with Easyjet.
This is a really great price, but so inconvenient to travel to that airport. We would prefer to travel from Bristol or Cardiff but the cost is quite considerably more.
I keep searching almost daily in case, by luck something affordable would appear from those said airports. As it is now drawing closer, I don't know whether to book from Stanstead or take a chance and see if anything else turns up.
I haven't much experience of flying, so don't know what is the best to do. Do flights get cheaper the nearer the departure date comes, and what would be my best chance of flying at a good price from a certain airport, or does this type of thing not happen?
The way I thought it is - if an airline doesn't sell all it's seats, then surely they sell them at a much reduced price, or am I wrong?
Any quick advice, much appreciated.

Well we are travelling from Wales so around the £40 mark maybe. Not just that though, the flight is very early in the morning which means, travelling through the night for 3 - 4 hours. Early flight wouldn't be so much a problem if from Bristol.0

what about an overnight stay at a hotel with parking? Little as £600 -
That was under consideration, but due to my friend's work, and not getting home til the evening, it wouldn't benefit us that much really. Unfortunately, they can't get off work any earlier either.0

Low cost airlines won't get cheaper close to the date - they'll get more expensive. Those flights from Stansted sound like remarkably good value, given how close you are to flying - I'd snap them up.From Poland...with love.
