Think I'd better get myself off to bed before I raid the fridge.

When I was rolling it out though it kept shrinking back so I put more pressure on it to roll it out more so that it would fit onto the pizza stone that I have.

I make my pizza dough with half bread flour and half plain flour, so it does not shrink back too much when it is rolled out.

the recipe in my book says

    1/2 tsp yeast
    300g strong white flour
    1 tsp olive oil
    1tsp salt
    170ml water

then just put it on the dough setting (takes 45 mins), prove for 10-15 mins, add topping, cook for 15-20 mins 220 oC.

makes 1 or 2 bases depending on thickness of base.

I buy ciabbata mix from tesco as it doesn't need yeast adding and just follow instructions on back and then shape into pizza base, it has a wonderful light soft bread texture and gives a deep pan base.

    The recipe I use is-
    mix these in bowl-
    350g strong white flour
    7g yeast
    1/2 tbl spoon black pepper
    mix these in jug-
    2 tsp oil
    225ml water/milk
    1 teaspoon sugar/honey

then mix all together to make dough, grease mixing bowl then put dough in bowl and cover and put in warm place for 2 hours.

Roll out then add toppings on chopped tomatoe base ( tomatoes boiled for 10-15 minutes )

I use the largest size of loaf ingredients but I put a good glug of olive oil in as part of the water measurement, omit the other fat and increase the salt by about .5.

I did it yesterday for our meal and it filled 7 easily.
  • I just use cheap plain flour and mine come out fab!

    1 1/4 cup warm water
    3 1/2 cups plain flour
    1 packet yeast
    1 teaspoon salt
    1/4 cup olive oil
    1 pinch sugar

Add to BM in order above and set to dough setting (1hr 30 in my Panasonic) When cycle has ended, knock back, roll out and place on baking tray. !!!!! all over with fork and bake in over for a few minutes until slightly cooked. At this stage you can cool and freeze the bases for future use. If using now, I use a HM tomato sauce as a base (onion chopped very small and cooked slowly in a little oil with some garlic until soft. Add a couple of tins of chopped toms and simmer slowly until a lot of the liquid has evaporated. Add chopped basil, and season). Tomato sauce can also be frozen and sometimes I mix some with spaghetti for a really cheap meal!

My kids love my HM pizza so much they don't like shop brought anymore! A cheap, nutricious and filling meal, especially when I make HM potato wedges to go with pizza (wash pots and leave skin on. Cut into wedge shapes and boil in saucepan of water until slightly soft. Drain in colonder and dry wedges thoroughly (using tea towel if necessary to remove all water) Place in bowl and add a teaspoon of olive oil and season. Shake bowl to coat wedges. Please in single layer on baking sheet and bake in hot oven until nice and crisp! Yum!!
