In winter I use Baileys in coffee instead of milk, it is also nice poured over plain ice cream if you don't have an ice cream maker.

Thanks for all your suggestions, they sound yummy. No, the bottle was opened probably two years ago (could be three or four, who knows!!!) and amazingly, it hasn't gone off. I thought it might have because it does contain cream, doesn't it? I am stuck as to which to try first.

I doubled the quantities, and made it as one big trifle, although I think they have overestimated the amount of Baileys in the recipe - I didn't use up the full amount stated.
