I made chocolate mousse with single cream and plain chocolate today as posted by Black Saturn. I said to DP how I thought itwould be nice with some Baileys in it.Nevermind the dog, beware of the kids!0

Mmm, personally if we have any dregs left over (not often) I make a pocket out of foil, pop a couple of bananas in witha glug of baileys and bake.

Hi there! Here is a lovely cheesecake recipe that I have tred and tested. It is really gorgeous!!!White Chocolate and Baileys Ice cream
Melt 100g (3 1/2 oz) roughly chopped white chocolate in a heatproof bowl over a pan of gently simmering water, making sure the base of the bowl doesn't touch the water. Meanwhile, mix together 500g carton fresh vanilla custard and 71 ml baileys (a mini bottle) in a large bowl. Beat in the warm chocolate, then gently fold in 284ml carton extra-thick double cream. Spoon the mixture into six 200ml (7 fl oz) ramekins or three ice cube trays and freeze for at least 2 hours or overnight. Soften at room temperature for 10 minutes. If you used ice cube trays, turn out the cubes of ice cream into six tall glasses. Decorate with thin shreds of orange zest and some pared white chocolate.
or you could also try this...White Chocolate Mouse Cake with Baileys
8 oz / 225 g dark Chocolate digestive biscuits
2oz/ 50g butter, melted
7oz/200g white chocolate
284 mls carton double cream
1 large egg, separated
5oz/150g golden caster sugar
9 oz/250g cream cheese
1 tsp vanilla extract
3 tbsp Baileys irish cream
A little cocoa butter for dusting
v Lightly grease an 8in/20cm springform cake tin or flan dish
v Whiz the biscuits in a food processor (or bash in a bag) to make fine crumbs. Add the melted butter and mix well. Press into the prepared cake tin or flan dish.
v Melt the chocolate in a bowl over a pan of gently simmering water, then leave to cool. Whip the cream until it forms soft peaks.
v In a clean bowl, whisk the eggwhite to soft peaks. Add 1 oz/25g of the sugar and continue to whisk until stiff, but not dry.
v Put the cream cheese into a bowl. Add the remaining sugar, the vanilla, Baileys and eggyolk, and whisk until smooth. Add the cooled, melted chocolate and whisk together.
v Fold in the whipped cream and eggwhite. Pour on to the biscuit base and smooth the top. Refrigerate for at least 2 hours.
v Dust with cocoa before serving.

I bought a new bottle of Baileys but on clearing out my drinks cupboard, found a litre bottle of it which must be about two years old. My husband thought it would be off but tried a bit and he says it tastes OK. I wouldn't want to give it to any visitors or anything so has anyone any recipes for something you could do with it? I thought there might be a recipe for icecream as I have seen Bailey's Haggen Daz icecream but does anybody have any other ideas? I haven't an ice cream maker or anything like that. Something easy but really yummy would be good.

I have used cheap baileys to make pancakes before, just replace some of the milk with baileys. They were yummy for desert with a scoop of icecream. Perhaps could be seen as a bit of a waste but it was the cheapo stuff from the supermarket which didnt taste as good as baileys I was happy to use it that way!!
