When should i pay off my oustanding balance?

Hi Everyone.
I have recently booked a wedding in Cyprus, and the reception is 6000 euros. I have already paid a deposit of just over a £1300. Could anyone advise when the best time to pay the remainder of the balance off, considering the euro is falling at the moment.
