  • Nigella has a version in her Feast book - it's basically cut up some leftover spaghetti with scissors and mix it into the egg mix for your omelette, together with whatever else you want to add (herbs, bits of ham, cheese etc.). Definitely yummy, and worth cooking extra spaghetti for! :-)

    Thank you for all your suggestions, it is now in the fridge.

    OH tucked in and said "needs more cheese", kids aren't that keen on it cold and I'll wait until tomorrow as I've seen enough food for today (been freezer cooking).

    you make it the same way as spanish frittita but with cold spaghetti instead of potato
