Please could somebody give me a quick step by step 'How to make an omelette' guide...
I know that I need to whisk the eggs together but what do I do with it in the pan? Do I just literally cook it on one side and then turn it over?
Sorry to ask a silly question but I 've never made one before!!

I whisk 2 or 3 eggs in a jug, with a splash of milk, and any other ingredients that i fancy (cheese, sweetcorn etc)
I then melt some butter in a frying pan (i do have a proper omelette pan, but a normal frying pan is fine) and then pour on the eggy mixture.
When it starts bubbling on the edges, i start pushing the edges towards the middle, and letting any 'unset' eggy mixture fill in the edge ive just moved.
Once all the runny mixture has gone, i put the frying pan under the grill for a couple of minutes to make sure the top has set properly.
Then i turn it onto a plate and eat. HTH!!!!!0 -
I do similar, but add the 'extra' ingredients (cheese/sweetcorn etc) after I've poured in the egg mixture, and put them only on half the omlette. When it's almost done I fold in half. This way I get lots of nice gooey cheese oozing out.

Well it was very nice but definitely couldn't have served it in a restaurant! I think I had the gas up a bit high as when I tried to pull the edges in it had already set a bit too much so the gooey bit didn't run out very well. I ended up just kind of mashing it into big chunks and tried to turn the chunks over, added a bit of cheese and cracked black pepper... Lovely!0

tigs78 do you have delias complete cookery course, its one of her earlier books? I cannot cook, but it has all the basic stuff in there, like omeletes, I did ignore some of her advice, like not seasoning the pan, her basics are the best. I can now cook an omelete.0

I havn't got any of Delias books but my sister has got the whole set so I think I might borrow them to try and educate myself a bit about how to cook the basics!0 -

Definitely go with the "How to Cook" books published recently. The Complete Cookery Course is brilliant - very comprehensive - but a bit like a text book. The "How to" books are much more fun to follow and have great modern recipes as well as the traditional ones.Warning ..... I'm a peri-menopausal axe-wielding maniac0 -

It's how it tastes that's important! But my mum taught me a little trick to make the omelette stronger. Take a teaspoon of cornflour, add a couple of teaspoons of water to make a paste, then once it's dissolved add a little bit more water to make it runny (if you add all the water in one go, it's harder to dissolve and can end up lumpy). Whisk through the egg mix. It doesn't change the flavour but it stops it breaking apart so easily.Context is all.
