You can't turn data off but you can set the phone to ask for confirmation before connecting.

Menu > Settings > Connectivity > Destinations > Internet

Double-tap the access point in question and set "Use access point" to "After confirmation".

Mine can be turned off and turns back on for an alarm. Used to have a 5800, now a N97 mini.
