    Hi mamae,

Yes you can use blackcurrants in baking/desserts just as you would any other fruit. My bushes are laden with fruit that is almost ready to be picked. What I do is put them into freezer bags and lay them flat on a tray (giving the currants a bit of a shake so they separate into a single layer) before freezing. Once frozen they won't stick together so you can lift as few or as many as you need out at a time. I use them to make muffins, pancakes, smoothies, jam, sauce for duck breasts, to top pavlova and if I have too many to make blackcurrant liqueur which is good for Christmas presents.

There are more ideas on this recent thread:

I'll add your thread to that one later to keep the suggestions together.

  • My nan used to make it into jam, then in the winter turned it into a hot ribena drink ( i realise you don't want that as an idea but i took me back to being little again :-)) Also she made the best blackcurrant pies yummy x

    Hello,

I bought 150g of blackcurrants today as they were yellow stickered now I'm stumped what to do with them.

Would they work in something like and apple and blackcurrant crumble/pie dish?

    It's for 1 adult and a 2 year old - I already know DH won't try them :(

    TIA

    Google search

Have picked our blackcurrants but they are rather gritty - splashback from the rain I assume and rather cobwebby too. I have picked them and want to make jam but not sure how to clean them properly as I remember reading that using wet fruit can give you mouldy jam?

    What would you do?

Wash them just before you put them in the pan with the measured amount of water for your recipe. Either drain them well and roll them around on kitchen paper before putting them in the pot or use a little less water to compensate for the water that will be on them.

I have googled blackcurrant jam and washing the fruit in a colander seems to be fine! So I am going to do that
    Thanks!

    Hi bigmuffins.

I just pick mine, put them into a colander and rinse them under running tap. I've never had any problems with the jam going mouldy.

Blackcurrant jam made but don't think I will have a mould problem as won't have enough to last that long! Made 6 jars and 4 are spoken for!

Have frozen some blackcurrants for later in year. Will make some more jam when redcurrants are picked. Mixed berry next as don't fancy redcurrants on their own.
Thanks for taking the trouble to post pink!
