I made the weetabix brownies today but halfway through mixing realised I had no eggs. I added 1/2 oz extra marg and 3 tbsps of milk. I replaced the choc drops with raisins and they taste lovely!
I've no idea if what I did makes any difference to how they taste with egg but they've already been demolished

well, it tastes fine! Pastry is a little crumbly, but it's ok. I've a quarter of it so far (whoops) and I might have some more! (and we haven't even had dinner yet!)0

Someone posted a recipe for a weetabix loaf. (tried to find it but couldn't -so if it was you who posted sorry for not quoting you)
I think it eas
2 weetabix
1 cup sugar
1cup raisin or sultanas
1tsp mixed spice or you could use cinnamon or a mix of cinnamon and ginger
2 cups Self rasing flour
1 cup Milk
Break up Weetabix and mix all together with rest of ingredients. Put into greased loaf tin
Bake at 170 °C / 325 °F / Gas 3 for 45 - 50 minutes.

I think the weetabix loaf was called malt loaf, I'll try to find it.

Malt Loaf Recipe
Preheat oven to gas mark 4. Put 3 weetabix, 4oz sugar and 40z of raisins or sultanas in a mixing bowl and add 1 mug of hot black tea. Leave to soak until the mixture has gone cold. Stir and add in 2 eggs. Stir again and add in 4oz self raising flour and 2oz porridge oats (optional but if not using oats substitute for 2 more ounces of flour). Mix thoroughly and add to a loaf tin and bake in the oven.

2 crushed Weetabix
1 cup of sultanas
2 cups of Self raising flour
1 cup of sugar
Mix these dry ingredients together, then add
1 cup of milk and a teaspoon of mixed spice
Stir again and pour the mix into a greased loaf tin, bake at 325 degrees for about 45 mins.

you can substitute a good tablespoon of water and a teaspoon of baking powder when you dont have an egg as all it is doing is binding (the liquid bit) and raising.
wartime recipes are good when you have no sugar or eggs as neither did they.0
