    2 tsp lemon juice
    salt and pepper to taste
    Whizz everything (except for the salt and pepper) in a food processor until the mixture has the consistency you like. Slacken with a little water if necessary, then season to taste with salt and pepper.


    Beetroot and Carrot Soup
    2 tbsp sunflower oil
    1 onion, chopped
    1 potato, peeled and diced
    500g beetroot, pre-cooked, diced
    500g carrots, sliced
    1 litre water
    1 stock cube
    0.5 tsp garam masala
    salt and pepper to taste
    Heat the oil in a pan, and soften the onion and potato for about 10 minutes. Add the carrots and cover the pan, cooking for a further 20 minutes. Add the water, beetroot, stock cube and garam masala, then bring to the boil. Simmer for 10 minutes, then blend and season to taste.


    these ones look intriquing enough to want to try them.

    I have been pondering on the purple portion issue and another way we could get some in is to use red cabbage instead of a green veg in bubble and squeak, should taste alright, not sure it would be a whole portion of 80g of the cabbage, but it all helps to get that purple in there

    You're welcome, phizzimum. Some of the combinations and ideas in "The Boxing Clever Cookbook" are really unusual, and all the ones that we have tried have worked really well -- for example, the curly kale pesto turned out to be the only way I could get my family to eat kale, and they actually liked it.

    Obviously, the beetroot recipes above have been modified heavily, so may not live up to the standard of the originals in the book! Please don't judge the original authors harshly if my frugalisation attempts have spoilt their recipes! :-)

    The pesto does sound fab... I will be making this soon :D
    Although, I am not a salt feind, so I think I will be rinsing the nuts first
    Quite liking the sound of the curry too

    Good idea. I didn't think of that. They're mostly subbing for pine kernels or walnuts, so the salt is definitely an unwanted addition. I'll edit the recipes with your suggestion.

    Weezle I am just filling in the carrot cake survey and I have a problem. Question 4 does not have the answer I would put which is, I would make it again if I did not have the ingredients or money to make my usual one (wholemeal).

    also, sorry about this, on the carrot cake survey, no two members of the family seem to be able to give the carrot cake the same number out of 10. Do you know if there's a way we can tweak that, cos obviously I want a whole pile of 10s!!!!;)
