    Sounds like Soup Night is way to go for us both ikkleosu! and sounds like H's mate isn't too perceptive ... let's hope he doesn't like soup ;)

    When you going to start? this w/e? I'm starting Monday with leek and potato (if not still snowed in ...)

    Won't be this weekend, as I've been ill. Haven't got ingredients in for soup, so will be next weekend. I will talk it over with DH, but he generally agrees with me so hoorah. :)

    Good luck with your on Monday. I will start looking for some good soup recipes now. I like the sound of lentil with crispy bacon lardons on top.

    Providing you include some protein (rubber chicken, any pulses, cheese, powdered milk) and some high fibre carbs (pulses, root veg, pot barley, bread, brown pasta) soup should be filling and a balanced meal. French onion soup is my all time favourite meal-in-a-bowl, also love curried lentil soup, chicken noodle soup and mushroom soup. :D

    Hope i am asking this in the right place but it is soup related:D
    I have just cooked a piece of gammon in the slow cooker but cooked it in apple juice, it is probably a stupid question but can I use it to make soup as it has the gammon stock in it as well.

    I would find apple juice too sweet for pea and ham soup.

    We have soup nights quite a lot, but generally its a main main served with lots of steaming hot HM bread yummmm
    Sometimes were to full eat to eat but if we do its some sort of hm crumble served with ice cream.

    For soups we normally just use whatever we have in the fridge / freezer, but we all prefer tomato soup with melted cheese topped bread hmmm think we might have to this again very soon.

    Oh and great idea for cooking pasta in the soup never thought of that , cheers.

    I've made soup today which I've just had for tea with HM bread. DS (19 and 6ft 2) had the same and loved it. DH has yet to appear from his office.

    Made with stuff I had in;

    Pack of sunblush tomatoes (oil drained off)
    Chopped onion
    Chopped two carrots
    Chopped two sticks of celery
    Chopped smoked ham
    Tin of tomatoes
    Ham stock
    Salt and pepper
    Herbs de Provence
    Thyme from the garden

    Sauteed then simmered with stock until soft. Blitzed and then added a knob of butter and a swirl of Elmlea light single cream.

    Served with some fresh parsley snipped in from the garden.

    Made two loaves with Linseeds in and it is really light and soft. The dough recipe had melted butter in rather than oil. Left it to rise for longer than normal.

    I dont do soup nights - stew nights with a good hearty welsh cawl!
    soup - I like but OH doesnt so soup tends to be my lunch!
    fave is red pepper soup
    real easy - this recipe serves about two cereal bowls full!

    one onion
    knob of butter
    one red pepper
    either chicken or vegetable stock cube or about three quarters of a pint of real stock

    cook the onion gently in the butter until soft
    add in the de-seeded (important) and chopped pepper
    add either the real stock or the cube dissolved in about three quarters of a pint of boiling water
    bring to the boil and simmer for about ten minutes
    blend in food processor or with a stick blender
    season to taste.
    you can add a dash of cream or to make it into cream of red pepper soup reduce the water and top up with milk or cream, but make sure it doesnt boil again.

    I find that if I cook gammon in apple juice the stock can be quite sweet so doesn't really suit pea and ham soup but makes a fabulous stock for butternut squash or pumpkin soup.

    Tonight was soup night here. I made delia's french onion soup and I had a portion of stew left over from Monday night which needed using up so I reduced it on the hob until it was quite thick and used some leftover puff pastry to turn it into pasties to go with the soup. We were too full for pudding! :D

    As this thread has dropped off the front page of Old Style I'll merge it with the recent thread on soup nights to keep the ideas together.
