  • Move you main meal to the evening and have a light lunch - or use your freezer and do your mash and roasties before hand and then you dont have to do the hot oil etc - they can be bunged into the oven/micro just for a reheat.

    We're heathens ;) but are far too busy doing all sorts of different things on a Sunday to eat lunch, so DH usually does a roast in the evening :D

    What time do you want to eat lunch? Would 1.30pm do? If so, how about a sausage or chicken casserole in the slow cooker?

    I've done chicken casserole today (using chicken breast chopped into small pieces),veg ( onion, peppers, carrots) and poured over some Chicken Tonight sauce. It was cooked in around 3 - 3 1/2 hours or so. (I did it on the 'high' setting, or you could put it on a low setting for longer, depending on what time you get up on Sunday morning). You could just stick some veg or rice on when you get home to go with the casserole. I've also done lamb and dumplings (made dumplings and put them in the fridge, then popped them in the slow cooker for half an hour when I got in).

    Not sure about doing a roast but I think I read somewhere on MSE that you can partly cook roast potatoes, then freeze them and reheat for around 35 mins - a bit like homemade Aunt Bessies! Sorry I can't recall all the details - maybe someone else can post a link.

    In the days when I used to go to church I remember the vicar's wife telling me that they always had beans on toast for Sunday lunch;)

    She clearly doesn't have kids like mine then, who are very sniffy about the idea of a snack meal at any time, and doubly so on a weekend!

    I've always done my main Sunday meal between 4 & 7, even when the kids were small

    Ah, well I don't suppose they'd ever known it any other way. I often do my Sunday roast in the evening -in fact in recent weeks I've taken to doing the roast (if we have one) on Saturday so that I have leftover meat for Sunday.

    No - the only one with Sunday school is at the time quoted.

    I appreciate all the suggestions about changing the time of the meal, but what I'm really after is ideas of how to be able to eat a reasonably substantial hot meal at lunchtime, given the limitations on when I'm around to prepare stuff. Although the reason for the request on this occasion, is to attend church, there must be others who need to have a meal ready 2-3 hours after they have to go out, and any tips as to how to do this would be welcome. At the moment, we either have a grilled piece of meat and a salad, or leave a casserole in the oven, but if there were ways to extend the repertoire that would be great.
