    I made a 'damp' almond and lemon cake for a friend who's just turned 60.I made it a few days ago.It's better if you leave it a few days apparently.I'm taking it round today.

    It's a Nigella recipe.Any cake with almond /lemon is my idea of heaven-so can't wait to taste it!

    It is extremely good and more-ish!

    Gluten free banana muffins to use up some ground rice I brought ys. They are lovely. White bread. Chocolate tray bake and rhubarb crumble(my F gave me the rhubarb from his allotment. And roast pork for tea. Like to get my use out of oven on.

    So sorry Florenceem; not been online for a few days what with work and getting DD1 back to Uni: Recipe is a slight variation on one from Mary Berry's Baking Bible - recipe here :

    Grease/line a 3pt bundt tin or ring mould
    Preheat oven to 180deg / Fan 160deg

    225g soft butter / margarine
    225g caster sugar
    4 large eggs
    225g SR flour
    2 lev tsps baking powder
    1.5 Tbsp cocoa powder
    1.5 Tbsp hot water

    Icing :
    150g plain chocolate (I use lidl - 35p for 100g, really nice)
    2 Tbsp water
    100g butter
    50g white chocolate (or could use milk - again I use lidl's)

    Put all cake ingredients EXCEPT cocoa powder and water into a mixing bowl and beat well until smooth.

    Dot about HALF this mixture into the prepared tin.

    Mix together the hot water and cocoa powder, then add to the remaining half of the cake mix in the bowl and mix well.

    Dot the chocolate half of the cake mix, in / around / over the plain cake mix in the prepared tin. Swirl together a bit with a knife or skewer, then level the surface and put in the oven.

    Bake for about 40 minutes until well risen and a skewer inserted into the middle comes out clean. Cool in the tin for a few minutes then turn out onto a wire rack and cool completely.

    Put plain chocolate into a bowl with the water and butter and heat gently over a pan of boiling water, stirring occasionally.

    This is the messy but satisfying bit.

    Let the icing cool a tad while you put foil or greaseproof paper under the cake and cooling rack. Then carefully spoon / pour the chocolate mixture over the ring cake until it's completely coated. There is enough icing, you just might need to spoon some up from under the rack to fill in any gaps..... !

    Once it's set, put the 50g white or milk chocolate into a disposable icing bag/food bag and sit it in a jug or pan of hot water until it's melted. Snip the very end of the bag / corner of the bag off and quickly 'wave' it backwards and forwards across the cake so you get lines of white chocolate to decorate.

    This is so easy to make and always seems to attract; just 'cos it looks fancy and therefore must be difficult!

    Made an Apple Caramel Crumble for pudding tonight when MIL comes for tea. Not sure how it'll taste - baking and eating apples peeled, cored and placed in a baking dish with some brown sugar, spoonfuls of tinned caramel dotted on top then a layer of crumble mix on top. Baked for about 40 mins then left on the worktop cooling. Will put back in the oven after I've taken the roast out, to warm through ready for when we've eaten the main.

    Also made 'Aunty Mays Bunloaf' - or a variation thereof - from the 'Food Glorious Food' book. Not made it before and it looks nice. Will try and take a photo and post later if it turns out OK ......:rotfl:

    Just made choc fudge cake, froze half for next week, while oven on made soda bread. Also did massive batch of base tomato sauce will do spag bol, chilli etc frozen in amounts of 3 for us.

    Two white loaves, one for home and one to give as a thank you for some tomatoe plants. Also made some rhubarb jam, the rhubarb is doing really well this year.
