    If you buy a gammon joint for cooking, you can soak it for a couple of hours, drain, then boil it in fresh water with an onion studded with cloves, some peppercorns and some bay leaves for 35-45 mins.(then you can stud the gammon joint with cloves, and glaze with a honey and mustard glaze and cook in the oven for 45mins to an hour, depending on the size of the joint)
    Not only do you have a hot ham for the meal, but you've got a good amount of ham stock for making lentil soup. I did this at the weekend and ended up with about 5 pints of stock because it took that much to cover the ham. I also reseved the onion to add to the finished soup.
    To the stock you can add a couple of onions, some carrots, red lentils, some soaked yellow lentils and chickpeas.
    I did this in the pressure cooker (which I think is essential for making soup)- I gave it 20 minutes at pressure, then once it had come off pressure, I added the onion I used for the stock earlier, minus the cloves, then used a hand blender to blend the soup up.
    Simple lentil soup, I had some for lunch today, and it was delicious. :)

    French onion soup: slice two or three onions into rings, sweat gently in butter and/or olive oil over a very low heat for at least half an hour until they are soft and really sweet. Add a crushed clove of garlic (or frozen garlic) towards the end. Add a litre or so of beef stock (or Xmas turkey stock), black pepper, fresh thyme if you have any, a generous splash of sherry or brandy and simmer gently for ten to fifteen minutes.

    To serve: cut some thick slices off a granary French stick and toast lightly, grate some Gruyere cheese (or Edam, must go stringy when melted). Faffy method is to ladle the soup into bowls, float the toast, layer on grated cheese and grill. Lazy method is pop the toast in the bottom of the bowl, layer on grated cheese, ladle over hot soup which melts the cheese. :D

    I've currently got half a butternut squash, 3 small potatoes, an onion & 2 veggie stock cubes simmering away!

    You'll be fed up by the end of the thread :D

    My current favourite is winter veg and barley.

    2 carrots, 1 parsnip, 1 medium potato, 2 sticks celery, 1 leek all diced/sliced. Go for 1cm cubes. 100g pearl barley (doesn't need to be soaked, but can be), 1.2 litres of stock and 1 tbsp tomato puree.

    Fry off the veg (recipe said in butter) for 5 minutes, add barley, stock and tomato puree and cook for 45 minutes until barley's soft.

    This makes a really thick, chunky soup and is utterly delicious. Recipe did have herbs and other stuff in but I didn't add them first time and it was fab :)

    I usually start with the dried soup mix and pearlbarley from Morrisons, then throw in any vegs from the freezer, onions; peas; carrots, whatever
    Did some last night the first time i've left the slow cooker on overnight.
    Lovely smell in the house this morning, it's turned off now but there's lunch in half an hour or so.
