Healthy Simple Soup Recipes

Hi,

Anyone got any simple soup recipes that are cheap and obviously healthy? Im a novice at this soup making and got a blender for xmas that I want to use to start making big thick soups.

Or even any nice chucky soups that I dont have to blend down?

Need cheap recipes though as money is tight this month! Damn January!:rotfl:

    Pea and ham, so simple but very tasty and filling. I use a pack of marrofat dried peas, soak in plenty water overnight.

    Put in big pan put in peas add chicken or veggy stock about 2 cubes make sure covers peas well, pepper and couple cloves of garlic. For the ham i buy already cooked from market for not much depending on size cut meat off and add it to soup...salt to taste. You will need to check water content and remove a bit of pea scum off the top at the beginning...takes about 3 hours on low.

    I don't use uncooked meat as it always gets too salty and fatty and my way is quicker, netto did an off cut pack for about £1.49 nice big chunks of gammon ham and plenty of it so i use half a pack to one packet of peas and freeze rest for next batch. :)

    I don't tend to use recipes, just chuck in and guesss!!

    Leek and potato - 3 or 4 leeks and one large potato, chopped onion, in a large pot and cover with veg stock. Once cooked blend. I don't add cream as I like them low fat.

    Mixed veg - same method as above using onions, swede, brocolli etc.

    If you add a tin of sweetcorn to the vege soup before blending it makes it lovely and sweet.

    Uses pulses and soaked dried or canned beans in your soup for cheap filling low-fat sources of protein. Makes your soup more sustaining too.

    Add a handful of this to your veggies for cheap, low fat protein, thickens the soup too, make sure there's plenty of stock as it will absorb some.

    or try red lentil and carrot, or minestrone type soup with soaked dried beans.

    If you have meat on the bone, like a small lamb shank and can slow cook it (on the hob if you haven't got a slow cooker), the flavour from the bone will make the soup taste wonderful. You can take the meat out, remove it from the bone and add back to the soup at the end

    When you have a chicken carcass, do boil it up and freeze the stock in portions. Makes delicious soup with less salt than a stock cube.

    A few scraps of leftover chicken and some noodles make a nice soup too.

    If you suffer from bloating, HM celery soup made with onions, garlic, chicken stock and topped with a handful of chopped fresh parsley (and minimal salt obviously) is a wonderful natural diuretic.

    Make your soup in decent size quantities and freeze in portion sizes so you've always got a quick ready-meal prepared. You can just defrost/reheat straight away on hob or in microwave.

    I would browse My Supermarket gourmet chilled soups section for inspiration, then google for recipes as how to make similar yourself at home.

  • My main tip when making any HM soup would be to very gently fry off the raw veg before you add the stock. You can keep it low fat by using a low cal spray and a bit of water. If you start off your veg in this way you don't end up with the scum floating on top of the soup, and the flavour is much stronger.

    Hi - I do this one quite often and it's a tasty change. It started off as a Slimming World recipe but I altered it to suit our needs.

    Special Beetroot Soup

    Whoops - let me know if you'd like it and I'll post it later - just seen the time and have to get out for my walk!;)
  • At Asda they have 'soup packs' in the fresh prepared veg section (where the stir fry storta stuff is..) - I bought 2 and made them up according to the pack and they're delicious - simply boil the contents in water and 2 veg stock cubes, then simmer for half hour and blend accordingly :)

    They currently do Carrot & Corriander and Leek & Potato. Both £1 a pack :)

    Im affraid im not a beetroot fan :( its the devil! :rotfl: but im sure other people will want to know how to do it.
