Hi everyone, I have lots of veg in the house that either needs using up or freezing - could anyone tell me the best way to freeze the following:
Carrots, parsnips and white potatoes
I froze parnsips earlier in the year and when I defrosted they turned to mush and were very soggy and discoloured! I wonder if anyone has any advice?

You could also cook them up and freeze them in servable portions. Carrot and parsnip mash is nice, regular potato mash, and soups too.Some days, it's just not worth chewing through the leather straps....

Hi,
I use frozen veg for making soup, just chop up and put carrots, onions, turnip in a bag, then all ready for making soup, don't defrost first or they go all rubbery, just add to stock.
If you freeze raw potatoes thet go black, so to freeze potatoes, boil, mash bag or tray and freeze, you could mix with boiled carrot/parsnip/turnip.
Never understand why folks buy mash veg mix from supermarkets.0 -
Lucy - peppers and mushrooms freeze well but do come out a bit soggy. Perfect for spag Bol and casseroles but poss not stir fry if you like them crunchy0

Peppers freeze well but lose crunch.But they're still fine in stir fries and a lot of people buy frozen bags of peppers for that purposeJust make sure you freeze them when fresh! I have the benefit of mine coming straight from the plant (well,sometimes lol)
As for courgettes (which my Kindle keeps changing to cigarettes!!!!) you can freeze them but as they contain so much water they could go rather mushy when used and not be so appetising. I ended up chucking loads of courgettes after a glut because I didn't want to freeze them
Can't help with any others though as have only ever bothered freezing peppers,can't go taking up valuable meat room in the freezer (I like it packed lol):oIf women are birds and freedom is flight are trapped women Dodos?0
