normal sponge can be frozen - just make sure you wrap it well.
just leave on teh side for a while to let it defrost.
Freeze un-iced.

I've frozen normal cooked sponge fairy cakes (think the advice was not to ice them till after defrosting though).
So I assume if it's not iced it should be fine.working on clearing the clutterDo I want the stuff or the space?0 -
My Ma freezes spongecakes all they time. If you make 2 cakes that will eventually be sandwiched together, put a sheet of greasepoof paper betwen them before you freeze them. Otherwise they stick together and take longer to defrost."Cheap", "Fast", "Right" -- pick two.0

In my bid to be a bit more organised with lunches for my 3 yo i'm trying to find a few recipes for cakes/tray bakes that freeze & defrost well. I've done buns before but she can't seem to manage a whole one & i end up with a load of bits of crumbled up cake in her lunchbox!
I've found a good looking recipe for Banana Oatmeal Cookies on an American site & i also thought of doing chocolate brownies cut into small bits. what's your best recipe for this kind of thing?

Hi Madison's mum,
I freeze muffins and pop them in the lunch boxes the night before or early next morning. If your little one can't manage a normal sized one try mini muffin cases.
I have also frozen portions of traybakes -victoria sponge variations- successfully.
My most useful books are Muffins:Fast and Fantastic by Susan Reimer and Mary Berry's Ultimate Cake Book

I do tray bakes - basic Victoria sandwich and put dried fruit in one, coconut and glace cherries in another and top the 3rd one with sugar/lemonjuice.
Doing something like that means there's plenty of choice and you can cut them up to any size you want.
They freeze well and defrost really quickly.0 -
i froze some ham & cheese muffins from Tana Ramsays family cookbook and they turned slightly blue-looking inside once defrosted.
the recipe clearly stated they could be frozen so i have no idea what went wrong!!0 -
I forgot to write that I also freeze scones, sweet and savoury.
I put chopped dates instead of sultanas in the sweet scones as they are softer for my kids (they don't really like dried fruit).
I also make rock cakes (you can add choc chips, dessicated coconut etc).0
