Hello all! hope you are all doing well! I have decided to batch bake some items for the freezer and am unsure of how to freeze the items so any help would be gratefully appreciated. This is what I want to freeze -
Jam tarts - do i freeze them cooked or uncooked (would prefer it if they were cooked)
muffins - not sure if you can freeze these at all.
Also can you freeze HM cookies?
Sponge cakes and fairy cakes.

Jam Tarts - these can be frozen, but are best frozen in their raw state and then cooked.
Muffins - cool well then pack in air proof containers/bags
Sponge cakes/fairy cakes - can be frozen in their raw or cooked state. Best if open freezed (on a baking tray) before packing in air tight containers/bagsHth

Hello,
Our first baby is due in the next 3 weeks :eek: so I thought I would start stocking the freezer. I can cope with making extra and freezing our general meals etc, but someone suggested making some batches of biscuits etc for when people inevitably pop round. (Or, realistically, perhaps just for me to munch on)
Any tips for the best freezable biscuits (or similar), and also, er.. how do you defrost frozen biscuits? Just leave them out of the freezer for a while?
I have searched the mega index and picked up some nice recipes, but just not sure on the freezing side of things...

Hi rosh,
A good place to start is Queenie's everyday biscuits. You'll find the recipe and hints and tips on making them on this thread.
Most biscuits freeze well. It's best to 'open' freeze them....ie freeze them flat on a baking tray and once frozen put them in a bag or wrap in foil all together. That way they don't stick to each other and you can lift out as many as you need at a time. To thaw, just take them out of the freezer and remove from any wrapping about an hour before you want them.

Ginger biscuits freeze well. Good for you, first of all for being so organised and second of all for being able to have biscuits in the freezer. If they're in the oven, they're in me0

Hmm I haven't actually made and frozen any yet- tbh, I'm a bit bored sitting at home on maternity leave so thought it would be a Good and Noble thing to do!!! The way I'm feeling at the mo, they will probably all end up in me!! Before the baby arrives!0 -
You can eat biscuits straight from the freezer
not that I've ever been that desperate of course

They don't go all icy, just cold. To defrost just leave them out until they come to room temperature -obviously if you spread them out they will warm up quicker.

I tend to make up the dough for the biscuits, blob it onto grease proof paper on a baking tray and then freeze it. When it is frozen you can cut up the grease proof paper and wrap the frozen dough in the paper and store in the freezer. When you want some pull them out and bake for a little longer than the recipie stated and they are all hot and crunchy. This saves on washing up too!
I thought that if you froze them cooked that they went a little soft so you had to reheat them in the oven anyway.
I also keep refrigerater biscuits in the freezer too. Its a bit harder to slice but it still works well and if it is in the freezer there is less temptation to eat them.
