Carrots and potatoes - Any ideas

i used 450g of carrots that where starting to go black to make a carrot cake today
first one ive made before so fingers crossed in comes out of the oven ok

I say SOUP!
Chop an onion, soften in oil/butter.
Add about 10 carrots and 3 medium potatoes, chopped.
Cover with water or stock, season with salt and pepper, bring to boil and simmer until vegetables are tender.
Blend, add a cup of milk or cream if you like, serve with chopped parsley/chives/green tops of onions. Yum!
This soup can be frozen too.

Add a little sage and thyme instead of the parsley also makes a great soup.Put the kettle on.0
