Carrots and potatoes - Any ideas

Hi I have a bag of carrots and potatoes. Apart from freezing the carrots what can I do with them? Any cooking ideas would be welcome. Thanking you in advance! x

I say SOUP!
Chop an onion, soften in oil/butter.
Add about 10 carrots and 3 medium potatoes, chopped.
Cover with water or stock, season with salt and pepper, bring to boil and simmer until vegetables are tender.
Blend, add a cup of milk or cream if you like, serve with chopped parsley/chives/green tops of onions. Yum!
This soup can be frozen too.

soups a great idea., also you could boil both up, and mash together, then freeze in portions.
Apologies for the person who originally posted about using an ice cream scoop to portion it, freeze it then pop it in bags, and I think they microwaved the amount wanted for each meal - I salute the OP that posted that, it works SO well!
We often do mashed carrot and potato, or neep and tatties, and all freeze well in portions.

Souper simple soup :P
All I do for soup is peel and chop a few carrots (about 2 per person) throw them in a pan, add a pint of vegetable stock and then I add quite a bit of either fresh or dried coriander.
Let it simmer for about 30mins or so and then using a hand blender whizz it up a bit so its a bit thicker leaving it as chunking or as pureed as you want

Wish I had carrots!I would have put them in the SC yesterday with the beef casserole or be using them in SC tomorrow with sausage casserole. We are just using what we have at the moment to save shopping in the snow.If winter comes, can spring be far behind?

Ooh, if you want to make some mash, this is Pink-Winged's excellent and tasty potato farl recipe. It's foolproof! Plus the farls can be frozen and used from the freezer
