I made my first batch and and I had them with mushrooms and quite wet scrambled egg... They were heavenly! :A

saute a chopped onion and couple of cloves of garlic, add grated carrot, grated potato, red lentils, tin of chopped tomatoes and stock (I use Marigold veg boullion), couple of bay leaves (optional) - bring to boil and simmer for an hour or two. Can i also add roasted carrots are good. I made some with a little brown sugar and butter and roasted in the oven. To die for!:jA little nonsense now and then is relished by the wisest men :cool:

Try this vegetable pancake . Make it with just carrots and potatoes -works for all kinds of root veg;)0

I think I use carrots in just about every meal I cook - if you grate them you can add them to rice while it's cooking, or add to spag bol, chilli, omlette etc. It gets another portion of veg onto everyone's plate without them noticing!weaving through the chaos...0
