My question is, I would normally use up leftover chicken the day after my roast; I'm trying to extend it this week, do you think the chicken will be ok on Wed? Its been kept in a plastic tub in the fridge?

    Thanks

    ZC

If kept in the fridge, cooked meats will be alright for 3 days (sniff). you can slice and portion the cooked meats into the freezer and defrost the day before if you want to use it later :)

Right, change of plan as I haven't been able to get to the shops since before new year (I had flu, and now I'm snowed in - well, iced in, anyway):

Friday - mushroom and talleggio parcels (this recipe, but with talleggio rather than goat's cheese as that's what I've got), with buttered green cabbage
Saturday - [STRIKE]beef paprikash, with mash if I can get to the shops to buy potatoes, or crusty bread if I can't[/STRIKE] - beef and mushroom stew with HM bread
    Sunday - aubergine parmigiana
Monday - [STRIKE]ham and cheese topped fish, with a jacket spud (if I've managed to acquire potatoes) and some sort of veg[/STRIKE] - chilli lasagne with tomato salad - the cat will have to have the fish as I'm nearly out of cat food
Tuesday - Chinese-style pork kebabs (from the freezer, left over from a summer BBQ), with veg fried rice
Wednesday - [STRIKE]tuna and pesto pasta bake[/STRIKE] - aubergine and lentil korma, with naan bread if I can get to the shops to buy bread flour
Thursday - [STRIKE]aubergine and potato korma (I'm sure I'll be able to get potatoes by now...) with HM naan bread[/STRIKE] - pasta with spicy tomato and tinned mackerel sauce

I really hope the world defrosts soon - I've got enough food in the cupboards and freezer to last me for another week or so, but I'm running out of things to feed the cat so he doesn't start trying to satisfy his appetite with my fingers.
Back after a very long break!

    Hi all

i am late posting this week but this is what we have had
breakfast is porridge for kids, weetabix for me and DH or toast

lunch is usually HM bread and HM soup (always veggie / lentil ) or cheese or leftovers (kids have school dinners)

mon --aggh can't remember (just remembered kids had tea at a friends, and i had HM lentil soup)

    tue - mushroom risotto

wed- HM onion bhaji's, chicken, butternut squash and mushroom korma, rice and HM chappattis

thurs - lamb chops with courgette, carrot, jacket pots

fri - filled veggie pasta with tom sauce + salad

sat - mushroom rissotto (tue was a practice as on sat i am cooking for a large group) green salad

sun - roast lamb with all the trimmings

I am trying to do this with the aim of cutting back on our meat consumption and eat more veggie / fish meals - but this has been hard this week as have not been out to shops due to weather and as we have a freezer full of our own organic lamb we are having lamb twice this week!
