PAYE is the responsibility of the employer to have paid over to IR/HMRC.
He has written terms from 1998 - which should show continuity of employment. That is something which nonetheless could be checked by Fred.0 -
I don't know the politics of them - being a crofter I'm in the Crofting Union, the Crofting Federation, but I presume that farm workers could & may join the NUF as I do know some crofters join them also.0

Granted, but - I personally sought advise from my union & was referred to a brilliant guy who gave his Thurdays to CAB & I got such specialist advice on a very complex area of Crofting Law & that was against another crofter - so, if he is a member of a union then he should seek their advice, referrals etc as why pay subs?
But he may not be a member of NFU - worth mentioning, I thought in case he was.

I asked because many people get paid "In cash" to avoid paying tax towards the services they use e.g. the NHS.0

If someone is paid under a PAYE scheme their tax liability is dealt with via their employer. HMRC will not seek payment of tax from someone who has sufferred deduction of PAYE unless they believe there has been some kind of conspiracy to evade tax, in which case the demand will be accompanied by a criminal prosecution.
An employee DOES NOT have a joint responsibility with his/her employer.0
