Hi Wilykit
Been mooching through recipes books and I've made this one for peanut Butter Cookes before and they're lush.
Its from the same recipe book as Twinks hobnobs recipe so you know its a good one(Bread, Cakes & Biscuits by Mary Norwak)
I think I'll try to find a copy of this book. twinks hobnobs are one of my biggest successes ever. I make a batch most weeks, sometimes with dried cranberries or raisins in them and they never last any length of time.
I'm also a peanut butter fan so I'll be trying the recipes above.
Thanks guys:D0 -
Does anyone have a recipe for using up some crunchy peanut butter in biscuits/cookies?
Asda have changed their smartprice peanut butter and it's rank, really oily. I thought I'd bake with it.Nevermind the dog, beware of the kids!0 -

Hiya, I used to make the River Cottage Peanut Butter Breakfast Booster Bars (that's the exact name if you want to Google a recipe) which were a yummy jazzed-up flapjack type breakfast bar. They use plenty of crunchy peanut butter if I remember correctly.
I'd be interested in some peanut butter and choc chip biscuits though!0 -

115g/4oz softened butter
115g/4oz crunchy peanut butter (Asda's is good as it's quite runny)
115g/4oz golden caster sugar
115g/4oz light muscovado sugar
115g/4oz oats
85g/3oz plain flour
1 beaten egg
1/2 tsp vanilla essence
1/2 tsp bicarb
1/2 tsp baking powder
pinch of salt
Preheat oven to 180C/350F/Gas 4
Mix together the butter and peanut butter
Beat in the sugars
Gradually beat in the egg and vanilla essence
Sift in the flour, bicarb, baking powder and salt and stir in the oats
Grease 3 baking sheets and drop spoonfuls of the mix onto the sheets, with room for spreadage. Flatten a little bit with the back of a fork. Bake for 12 mins, leave to cool for 2 mins then transfer to a wire rack to cool.
You can make them whatever size you like. I like them smallish so a small teaspoon of mix is enough. I get about 40 cookies out of this quantity. They last about 2 daysAnd it's only me and son who eat them
And I'm supposed to be on a diet
These are delicious!0 -
It can be used for "houmous"
1 can of chick peas. (well drained)
5 tablespoons of peanut butter
5 tablespoons of lemon juice
1 tablespoon of olive oil (the stronger the better)
Half a teaspoon of black peppercorns
A pinch of chilli powder. (cayenne pepper)
Put everything into the food processor and whiz until smooth.
Add more oil if needed.0 -
