Question : Why does Pernod and Sambucca turn white when water is added to them?
Answer: Anisette based drinks rely on aromatic compounds called Terpenes for their flavour.These Terpenes are soluble in alcohol but not in water.The 40% or so of alcohol in the drink is enough to keep the terpenes dissolved ,but when mixed with water they are forced out of the solution to give a milky -looking suspension............
