    to persuade her, why not make a mini batch, some flavoured with good vanilla extract, some with lemon zest/juice, some with almond etc. and plain, - they'll all look pretty plain, but then she can choose which taste she likes best and you are off the hook!

    Hi lisawood,

    This blog has some delicious sounding suggestions for different flavours: cupcake bakeshop If you click on the links it will take you to recipes and pictures. Like greenbee, I would tell the bride that the cake will look and taste much better if it's layered with a filling.

    Hi i second using butter, organic eggs and a good quality vanilla extract( more expensive but well worth it) you can buy it online at lakeland, or at waitrose and you dont need to use a lot of it so it lasts ages.
    A tip for icing or butter icing your larger cake just turn it upside down and ice the bottom instead as that will be flat

    Grated lemon rind in some of the cake mix with lemon-juice glace icing would be tasty. Or grated orange rind with orange-juice glace icing. Vanilla would be lovely as suggested perhaps with a delicate 'cream coloured' icing

    Could you make up some samples of what you mean by 'flavoured' cakes for her to taste? She may be envisaging chocolate/coffee/walnut fairy cakes which would possibly detract from her chosen colour scheme.

    Just remember that butter will make the cupcakes peak - if you want them to be flat, you'll need to use vegan margarine & pipe the mixture into the cases. I'm sure you know all this, but its easy to forget when you're working to a deadline.

    If you don't already have one, I'd invest in a cake leveller for cutting the layers. I can never cut them straight with a bread knife, and for about £4 it has revolutionised my cake making!

    What are her colours?

    Off to face my own deadline for an 11" round cake with a pig on it for Saturday...!

    How about using a maderia recipe as it tastes lovely plain and keeps well too? Just a little thought:p
  • if she wants a plain sponge cake with icing on top then give it to her, i would happily eat a wee cake with some vanilla buttercream icing on top...drooling at the thought lol

    as a pp said use good quality ingredients and good vanilla extract.
  • just a thought...when you say cupcakes do you mean using muffin cases or small paper cases? i use muffin cases so that you get the depth. fairy size cakes arent really that impressive imo when you want to top them with a big swirl of buttercream icing.

    i have made icecream style cornet cakes....you might want to make these for the kiddies?
  • My MIL made our wedding cupcakes.We had 2 types plain sponge in white muffin cases with chocolate icing, chocolate sponge in brown cases with white icing and both had hersheys kisses on top (white and milk choc swirled).We then brought a plain sponge cutting cake for the top from M&S for the top as after making 120 cupcakes and the weeks of trials beforehand we thought MIL might be sick of the sight of cakes!

    I agree with the trial idea, we ate sooooo many versions of cake and icing in the months up to the wedding that MIL had a notebook full of ideas and no-nos!All good fun!
